  • One full cup of softened unsalted butter
  • One and a half cups of sugar
  • Four large full-size eggs
  • One and a half tiny teaspoons of vanilla powdered extract
  • Two and a half cups of white all-purpose flour
  • One teaspoon of baking powder
  • Half tiny teaspoon of salt
  • Two cups full of fresh or frozen cranberries
  • Half a cup of finely chopped walnuts

  • First of all, preheat the oven to 350° F or 177° C and prepare your cake pan by greasing it up completely with butter or vegetable oil. Remember to cover the internal circle properly or the cake will stick to the pan.
  • Take a bowl and add sugar, butter, cream cheese, and vanilla extract, and beat it until it is completely smooth. Next, take the eggs and add one egg at a time, i.e add one egg and mix it well then add the next. Once done keep this mixture aside for some time.

  • Now take your prepared pan and pour the mixture very carefully into the pan and bake for around 65 to 70 minutes or more time if it seems necessary to you. Let it sit in the oven for 5 minutes before removing it from the oven. To check if the cake is done or not, poke a toothpick in the cake and if it comes out clean, you are good to go. Let it cool down and before serving garnish the cake with powdered confectioners’ sugar.
