    Instructions

    Firstly, add an onion with some butter and olive oil to a frying pan set over low heat together with the rice. That’s called a soffritto.

    After that, pour some white wine so that it can be absorbed by the grains. Raise the heat to medium high and add the broth in small amounts. Stir so that the grains can start releasing all the starch and a smooth textured mass is created.

    Once the rice is cooked, take the pan out of the heat and add the Parmesan cheese with the butter. Both should be well refrigerated. This will make the rice even more creamy.

    Remove the pan from heat some minutes before it’s ready, so that the rice is cooked with the residual heat.

    Instructions
    1. To begin with, pour the coconut oil into the frying pan set over medium heat. Slice the red bell peppers and the yellow bell peppers, mince the onions and mix everything with the garlic. Add a pinch of salt and pepper. Cook everything together with the minced ginger until it starts softening.

    No, they are not. Nowadays, and because culture evolves and dishes do too, Spanish rice is slightly different. Even though they use almost the same ingredients, Mexican rice uses a Mexican-style tomato sauce, which is generally spicier.

    • 1 tablespoon extra-virgin olive oil.
    • 1 onion.
    • 2 cloves garlic.
    • 1 cup of white rice.
    • 2 cups of chicken broth.
    • 1 can of tomato soup
    • 1 teaspoon of chili powder
    • 1/2 teaspoon of cumin
    • 1/4 teaspoon of salt
    • 1/4 teaspoon of black pepper
    • 1/4 cup of chopped fresh cilantro

    Instructions

    1. Over medium heat, pre-heat the olive oil in a medium-size pan.

    Ingredients:

    • 1 cup of orzo.
    • 8 cups of chicken or vegetable broth.
    • 6 egg yolks.
    • 2 cups of shredded chicken.
    • ¼ cup of lemon juice
    • 1 tbsp of salt.
    • ½ tbsp of pepper.

    Preparation:

    1. Take a large saucepan and pour the previously made chicken or vegetable broth. For a truly homemade dish, prepare the broth a day in advance. If you don’t have the time, you can use one or two flavor cubes in eight cups of water.
    2. Bring the broth to a boil and add a cup of orzo. Cook the orzo for seven minutes or until it is tender enough. This will depend on your personal taste.
    3. In the meantime, take a bowl and separate six egg yolks. Beat them firmly.
    4. Take one cup of the hot broth and pour it in the eggs bowl gently and steadily at the same time you mix everything together. Make sure to do it slowly so that the eggs don’t curdle.
    5. Take the mix to the saucepan and pour it slowly. If you haven’t already, take the heat to medium and let everything cook.
    6. Stir from time to time and let everything cook until you get that creamy consistency. That should take between five and seven minutes.
    7. Pre-cook the shredded chicken in a separate pan. Remove it just two minutes before it is done.
    8. Now, pour the lemon juice in the orzo sauce pan and mix everything together. Do so gently.
    9. Add the chicken and let everything cook for a few minutes so that the chicken is soaked on the broth.
    10. Season everything to taste and serve.

    Note: For a veggie version of this soup, you just have to omit the chicken steps. If you want, you can replace the chicken with some chickpeas. Make sure you let them sit in water overnight, before including them in your soup.

    Ingredients:

    • 1 cup of rice.
    • 4 zucchinis.
    • Extra-virgin olive oil.
    • 1 carrot.
    • 1 onion.
    • 1 cup of mushrooms.
    • 1 clove of garlic.
    • 1 red pepper.
    • 1 tbsp of salt.
    • 1 tbsp of oregano.
    • ½ tbsp of pepper.
    • 1 tbsp of paprika.
    • Cheese to taste.

    Preparation:

    1. Start by cooking a cup of orzo in two cups of boiled water for eight minutes. Do not overcook it as you’ll finish it cooking later in the oven.
    2. Wash the zucchinis and cut them in half. Take them to a previously heated oven for no longer than ten minutes in medium heat.
    3. In the meantime, take a medium size pan and pre-heat some extra virgin olive oil.
    4. Chop the onion, pepper and carrot and include the vegetables you want. Take the vegetables to the pan and salt them. Cook until the onion is translucent.
    5. Include the previously chopped mushrooms and cook until browned.
    6. When the orzo is ready, take it out and let it sit and cool down for a while.
    7. Mix the vegetables with the orzo and give everything a good stir.
    8. Stuff the zucchinis with the mix and top them with the cheese of your liking.
    9. Take them to the oven and, over a medium heat, let the cheese melt and finish cooking for five minutes. Serve!

    • ½ cup of green onion.

    Instructions:

    1. Start by preparing the white rice as usual. Use two cups of water for every cup of rice and make sure you don’t overcook it. Cook for about ten to fifteen minutes and once ready, drain it and set aside. Let it cool down.

    3. In that same skillet, place the previously shredded chicken thighs. Before cooking, season the thighs with salt, pepper and any other seasoning you like. Take them to the skillet over a medium heat and cook for ten minutes, making sure it cooks all over. Once done, set that aside too.
    4. As the chicken is getting ready, take the onion, the red bell pepper, the green onions and the cloves of garlic and chop everything up. Take everything to the skillet. Use the same pan and do not wash it in between steps.
    5. Season the vegetables with salt and pepper and cook until everything is tender. Stir from time to time so nothing gets burnt.
    6. Chop the green onions and add them to the mix.
    7. Add the soy sauce and keep stirring. Add the sesame oil, the cumin and the sugar. Whisk and integrate everything.
    8. Now bring back the cooked and cooled rice and add it to the mix. Mix everything together and add the chicken thighs.
    9. Let everything cook for five to eight minutes and then add the eggs.
